2/3 C. Pumpkin Puree
5 T. Butter
2/3 C. Swerve Brown
1 T. Vanilla
2 C. Flour OR 1 C. Flour + 1 ½ C. Almond Flour
3 t. Baking Powder
1 T. Cinnamon
1 t. Salt
1 C. Pecan Halves
1. Spray a muffin tin pan and line with paper liners. Set aside.
2. In a large mixing bowl, mix eggs, pumpkin, butter, Swerve and vanilla.
3. In a small bowl, combine flour, baking powder, cinnamon and salt.
4. Mix into the first mixture. Fold in the pecans.
5. Spoon into the muffin tins.
6. Bake at 350 for 25-30 minutes.
