Cookie Ingredients:

½ C. Swerve Brown


5 T. Butter

1 Egg

1 t. Vanilla

1 ½ C. King Arthur’s High Protein Flour (Or Almond Flour/All-Purpose Flour)

¾ t. Baking Powder

½ t. Salt

Filling Ingredients:

½ C. Chopped Pecans

½ C. Swerve Brown

1/4  C. Heavy Whipping Cream

1/2 C. Lily’s Dark Chocolate Chips

Easy Directions:

  1. Spray a mini muffin pan and set aside.
  2. In a mixing bowl, cream together the butter, eggs, Swerve and vanilla. Add in flour, baking powder and salt.
  3. In a small bowl, combine all filling ingredients.
  4. Place a tablespoon of cookie batter into each muffin tin. Top each cookie with a tiny amount of the topping ingredients.
  5. Bake at 350 for 10-15 minutes.
  6. Let cool and set!
