1 Bag of Aldi Baked Cauliflower
½ C. Fresh Mushrooms
½ C. Fresh Sliced Zucchini
½ C. Fresh Sliced Yellow Squash
½ C. Fresh Springs of Asparagus
4 Skinless Chicken Things
½ C. Pumpkin Puree
¼ C. Heavy Whipping Cream
½ C. Pecans
¼ C. Mozzarella Cheese
1. In medium size casserole dish, place baked cauliflower and then, layer up with mushrooms, zucchini, yellow squash and asparagus.
2. Place chicken on top. In small bowl, combine pumpkin with cream and mix well. Spread onto chicken layer and top with cheese. Finish topping with pecans. I did add a little salt and pepper to taste.
3. Bake at 350 for 60 minutes!
