Ingredients:

2 T. Olive Oil
3 T. Butter
2 Lbs. Deveined and Tails Removed Shrimp (Frozen or Fresh)
3 T. Garlic
1 ½ C. Grape Tomatoes
4 C. Fresh Spinach
1 C. Heavy Whipping Cream
½ C. Parmesan
3 T. Fresh Chopped Basil
Salt and Pepper to Taste

Easy Directions:

In large skillet, heat oil and butter until melted. Add the shrimp, toss in salt and pepper to taste and sauté for 2-3 minutes. Remove shrimp from skillet and set aside. In skillet, put garlic, tomatoes, spinach and continue to sauté for 2 minutes. Add in the cream, cheese and basil. Simmer for about 5 minutes stirring constantly—toss in the shrimp. Enjoy!
