Ingredients (Makes 9–12 bars)
Crust & Crumble
- 2 cups all-purpose flour
- ½ cup granulated monk fruit sweetener
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup cold unsalted butter, cubed
- 1 large egg
- ½ tsp almond extract
- 1 tsp vanilla extract
Filling
- 1 ½ cups diced fresh strawberries
- 2 tbsp powdered monk fruit
- 1 tbsp cornstarch
- 1 tsp lemon juice
Easy Instructions
- Preheat oven to 350°F. Line 8×8 pan.
- Mix flour, monk fruit, baking powder, salt.
- Cut in butter until crumbly.
- Add egg and extracts. Mix until soft crumble forms.
- Press ⅔ into pan. Bake 10 minutes.
- Toss strawberries with monk fruit, cornstarch, lemon juice.
- Spread over crust.
- Sprinkle remaining crumble on top.
- Bake 25–30 minutes.
- Cool completely before slicing.
