Ingredients (Makes 9–12 bars)

Crust & Crumble

  • 2 cups all-purpose flour
  • ½ cup granulated monk fruit sweetener
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup cold unsalted butter, cubed
  • 1 large egg
  • ½ tsp almond extract
  • 1 tsp vanilla extract

Filling

  • 1 ½ cups diced fresh strawberries
  • 2 tbsp powdered monk fruit
  • 1 tbsp cornstarch
  • 1 tsp lemon juice

Easy Instructions

  1. Preheat oven to 350°F. Line 8×8 pan.
  2. Mix flour, monk fruit, baking powder, salt.
  3. Cut in butter until crumbly.
  4. Add egg and extracts. Mix until soft crumble forms.
  5. Press ⅔ into pan. Bake 10 minutes.
  6. Toss strawberries with monk fruit, cornstarch, lemon juice.
  7. Spread over crust.
  8. Sprinkle remaining crumble on top.
  9. Bake 25–30 minutes.
  10. Cool completely before slicing.
