Hi! I thought I’d just drop a quick note to greet everyone. Even though I’ve been posting new recipes (almost 3 a week) I haven’t blogged. Thank you for your continued daily messages and gratitude for this recipe blog. It’s truly my honor. I enjoy it—just as much as you do!

I have to admit I was craving banana bread and was, as we know—those trusty ol’ bananas are a hidden dose of sugar and a no-no for diabetics or anyone watching their sugar levels. Sometimes you need to roll up your apron and get creative.


The Hubs thought I had lost my mind when I told him I was going to try to bake banana bread without bananas! He went golfing (typical Saturday morning routine) and I went straight to my kitchen (typical Saturday morning routine after those dandy garage sales!).

I texted him a simple, “I told ya so!” He sent back a smiling face with a thumbs up. I sent a pic to The Folks warning them that I might eat the whole darn loaf (not really).

When The Hubs came home, he gobbled up about……half a loaf. The rest we brought over to the neighbors, who asked when we walked in—is that the banana bread without bananas?

Why yes…..why yes, it is! Who would have thunk? Never in my wild banana dreams did I think I’d be baking such a recipe or care to make such a recipe. But, we do what we need to do, right?

You can have diabetes—eat good—and live life. Trust me, I know. And, I know you are right there with me every post, recipe and share.

The No Sugar Baker (AKA Jayne)

No Sugar Baker’s Banana Bread Without Bananas!

Ingredients:

½ C. Butter
2/3 C. Swerve Granular
4 Eggs
1 T. Vanilla
1 T. Banana Extract
2 C. Almond or All Purpose Flour
5 t. Baking Powder
½ t. Xanthan Gum
2 t. Cinnamon
½ t. Salt
½ C. Sour Cream or Greek Yogurt
½ C. Chopped Walnuts or Pecans
½ C. Lily No Sugar Added Dark Chocolate Chips

Easy Directions:

Spray a 9×5 loaf pan and set aside. In large bowl, cream together butter and Swerve. Add in eggs, vanilla and banana extract. In separate small bowl, mix together flour, baking powder, xanthan gum, cinnamon and salt. When combined, add to butter mixture. Next, fold in the sour cream or Greek yogurt and combine well. Add in your walnuts, pecans and chocolate chips. Pour into pan. Bake at 350 for 50-55 minutes. Remove from oven and let set in pan for 5-10 minutes. Remove from pan and let cool. Slice and enjoy!
