I love hearing from all of you. It makes my day! I smile. I understand. And certainly, I can relate! I’ve decided to introduce a monthly blog post, “No Sugar But Spice & Everything Nice” where I will answer your five most common questions. Like I’ve said before, I’m not a certified dietician and don’t pretend to be one.

Q: Can you provide nutritional information?

All the recipes are no-sugar and very low carbohydrate. (Remember I can only eat 20 carbs a day or less!) Providing nutritional information is tough. Here’s why—your serving size might be different than my serving size. I can usually estimate the number of carbohydrates based on my experience.

Q: Where do you find Swerve Granular? What is Swerve Granular?

Swerve is a sweetener. It’s the one I prefer after trying others. I don’t get a funky taste or aftertaste from it. It can be found at your local grocery store (by the other sugars), Walmart, Target or Amazon and comes in three different types: Granular, Brown or Confectioners.

Q: Do you have a cookbook?

No. I started this blog a month ago. I was hesitant because clearly, I share personal information that makes me vulnerable to negativity. But, The Folks and The Hubs encouraged me to do so. They both said, if it helps just one person you need to do it. I will put a cookbook on my radar for a long time away! HA!

Q: Where are you located? Do you ship your goodies?

I live with The Hubs in southwest Florida. The Folks live across the highway from us six months out of the year. Em is a college student in Iowa. I’m a Midwest Minnesota heart who traded her snow shovel for a beach shovel! I’m sorry, I don’t operate a bakery, business or ship any goodies. You’ll have to move into our neighborhood to join my team of taste testers! They seem to get treats daily!

Q: When you got your eyesight back, was Hot Doctor ‘really hot’?

HA! HA! I’m laughing right with ya! He’s very easy on the eyes……..as we like to say! HA!

I enjoyed making this jalapeno popper soup for a Sunday night supper (remember, Minnesotan!) The Hubs only spit out the jalapenos about five times, but who is counting? It has some zip, taste and is quite easy to prepare!

We’re on a roll. Life is sweet.

No Sugar Baker’s Jalapeno Popper Soup

Ingredients:

1 Package of Bacon (cooked and crumbled)
3 C. Chicken (cooked and crumbled)
1 T. Butter
6 Fresh Jalapeno Peppers (deseeded and chopped)
2 C. Green and Red Peppers (chopped)
½ C. Onion (chopped)
1 T. Garlic (minced)
2 C. Heavy Whipping Cream
8 Ounces Jalapeno Flavored Cream Cheese
8 Ounces Cream Cheese
4 C. Shredded Cheddar Cheese
3 C. Chicken Broth
Salt to Taste

Easy Directions:

In Dutch oven or large pot, melt butter and add all peppers and onions. Sauté for 3 minutes. Add in garlic, cream cheeses, and cream, melt the cheeses until the mixture is smooth. Then, reduce heat and add in cheddar cheese, stirring until melted and smooth. Add in chicken broth, stir until combined and warm. Fold in bacon and chicken. Combine, salt to taste and serve in your favorite bowl!
