Loaf Ingredients:
6 T. Butter
4 Oz. Cream Cheese
¾ C. Swerve Granular
½ C. Heavy Whipping Cream
4 Eggs
1 T. Sugar Free Strawberry Preserves
1 T. Vanilla
2 ¼ C. King Arthur’s Protein Flour
½ C. Cocoa Powder
1 T. Baking Powder
1 t. Salt
Frosting Ingredients:
8 Oz. Strawberry Cream Cheese
1 T. Butter
1 C. Swerve Confectioners
½ C. Heavy Whipping Cream
Easy Directions:
- In a large mixing bowl, cream together butter, cream cheese and Swerve. Mix in the heavy whipping cream and eggs. Mix well. Add in the vanilla and strawberry preserves.
- After well mixed, add flour, cocoa, baking powder and salt.
- Pour into a well sprayed 9×5 loaf pan.
- Bake at 325 for 60 minutes.
- Let cool and set.
- In a large mixing bowl, whip together all frosting ingredients until light and fluffy. Top your loaf!
