1 Medium Head Cauliflower
1 T. Cream Cheese
½ C. Grated Parmesan
1 T. Minced Garlic
¼ C. Chicken Broth
1 t. Chopped Chives
3 T. Butter
Salt and Pepper

Easy Directions:

In a large saucepan, bring water to boil. Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes. Drain well, do not let cool and pat cauliflower very dry with several layers of paper towels. In a bowl or food processor, puree the hot cauliflower, cream cheese, parmesan, chicken broth, garlic and salt and pepper until almost smooth. (You can bake at 350 for 10-15 minutes to give extra creamy flavor1) Top with chives and more butter.
