1/3 C Swerve Brown
2 ½ T. Cornstarch
2 C. Half & Half
2 Egg Yolks
2 T. Butter
1 t. Vanilla
In microwave safe bowl, combine Swerve and cornstarch. Add in half & half and egg yolks. Mix well.
Microwave for 5 minutes. Stir well to prevent lumps. Again, microwave for 2 additional minutes. Stir in butter and vanilla. If the pudding appears to have lumps, beat well. Pour into dessert dishes and refrigerate. You can top your pudding with whipped cream, almonds, chocolate chips or berries.
Variation: You can substitute unsweetened almond milk for the half & half.
