Cookie Ingredients:

1 ½ C. King Arthur High Protein Wheat Flour

¾ C. Cocoa

½ C. Swerve Granular

1 t. Baking Powder

1 t. Baking Soda

7 T. Butter

2 T. Water

1 T. Vanilla

Filling Ingredients:

6 T. Butter

1 C. Swerve Confectioners

1 T. Heavy Whipping Cream

1 t. Peppermint Extract

Topping Ingredients:

2 C. Lily’s Dark Chocolate Chips

5 T. Butter

Easy Directions:

  1. In a large mixing bowl, combine all cookie ingredients. Press into mini cupcake pan and bake at 350 for 10 minutes. Let cool.
  2. In a mixing bowl, cream together all filling ingredients and chill until firm. Spoon onto each baked cookie and refrigerate overnight.
  3. In a small bowl, melt together the topping ingredients in the microwave (60 seconds) and top each cookie!
