1 Large Cooked Spaghetti Squash
2 Cooked and Diced Chicken Breasts
½ C. Diced Red and Green Peppers
½ C. Diced Chopped Celery
½ C. Chopped Onion
2 T. Olive Oil
2 T. Garlic
½ C. Buffalo Sauce (Like Frank’s Hot Sauce)
¼ C. Mayonnaise
3 Beaten Eggs
½ C. Blue Cheese Crumbles
1 C. Parmesan Cheese

Easy Directions:

1. In skillet, sauté olive oil with garlic, peppers, onion and celery. When tender, add in chicken and squash. Mix well.
2. Pour into mixing bowl, then add in buffalo sauce and mayonnaise. Blend well, add in eggs and continue to combine.
3. Pour into casserole baking dish, I use an 8×8. Top with cheeses.
4. Bake at 350 for 45 minutes.
