No Sugar Baker’s Pumpkin Banana Bread (Minus the Bananas!)
½ C. Oil
1 ½ C. Pumpkin Puree
1 ½ C. Swerve Granular
1 T. Vanilla
3 T. Banana Extract
2 C. All Purpose Flour
2 t. Baking Powder
1 t. Baking Soda
½ t. Salt
1 C. Chopped Pecans
1. Spray a loaf pan and set aside.
2. In large bowl, mix oil, pumpkin puree, Swerve, eggs, vanilla and banana extract. In small bowl, combine flour, baking powder, baking soda and salt. Add to batter and mix.
3. Fold in pecans.
4. Pour into loaf pan and bake at 350 for 40 minutes.

I got very sick and thought I was battling the common flu. That flu never let up. After weeks of feeling miserable, the Hubs dragged me to the emergency room.
