Pie Ingredients:
1 Premade Pie Crust
3 C. Fresh Raspberries
½ C. Lemon Juice or Water
¼ C. Purecane Granular Sweetener
1 T. Vanilla
1 T. Cornstarch
1 Package of Sugar Free Raspberry Gelatin
Cream Cheese Layer Ingredients:
8 Oz. Cream Cheese
½ C. Purecane Confectioners Sweetener
1 T. Vanilla
Easy Directions:
- Bake your pie crust per instructions and let cool.
- In a saucepan, bring all other ingredients to a rolling boil.
- Let boil for 5 minutes and reduce heat. Let simmer for 15 minutes.
- Stirring constantly.
- Pour into baked cooled pie crust.
- In a small bowl, using an electric mixer, whip together cream cheese, sweetener and vanilla until light and fluffy. Spread carefully on top of pie layer.
- Refrigerate overnight and let set.
- You can top your pie with melted white chocolate/butter or zero sugar whipped cream.
