Cake Ingredients:
1 C. Butter
1 C. Swerve Granular
2 Eggs
2 T. Vanilla
2 ½ C. All Purpose Flour OR 2 ½ C. Almond Flour
½ C. Cocoa
2 t. Baking Soda
1 t. Salt
1 C. Unsweetened Almond Milk OR 1 C. Heavy Whipping Cream
1 T. White Vinegar
2 T. Red Food Coloring
Frosting Ingredients:
1 8 Ounce Cream Cheese
¼ C. Butter
2 C. Swerve Confections
1 t. Vanilla
Pinch of Salt
Easy Directions:
Line two 8-inch cake pans with parchment paper and spray them generously. In large mixing bowl, cream butter, Swerve and add in eggs and vanilla. In small bowl, combine flour, cocoa, baking sods and salt. Add combined ingredients to butter mixture. Next, add in milk or cream, vinegar and food coloring. Mix until just combined. Pour equally into pans. Bake at 350 for 25-27 minutes. Let cool and then remove from pans and let cool completely.
In large mixing bowl, beat all frosting ingredients until smooth and creamy.
Place one cake layer on serving platter, then top with a generous layer of frosting. Add 2nd cake. Continue to frost!
