2 Lb. Chicken Thighs, Skinless and Cut into Little Pieces

2 T. Arrowroot Powder OR Corn Starch

2 Eggs

2 T. Sesame Seed Oil

4 T. Soy Sauce

1 T. Vinegar

1 t. Ginger

1 T. Garlic Powder

3 T. Toasted Sesame Seeds

1 t. Xanthan Gum

2 C. Fresh Broccoli

1 C. Cooked Cauliflower Rice

Easy Directions:

In a small bowl, mix the egg and arrowroot powder. Coat the chicken with the batter. In fry pan, heat up sesame seed oil. Add the chicken and gentle cook each side for a total of 10 minutes. Set aside and let drain. In same saucepan, combine soy sauce, vinegar, ginger, garlic powder, sesame seeds and xanthan gum. Stir and cook continuously. Add in chicken and broccoli. Continue to cook over low heat until broccoli is tender.

Serve over cauliflower rice.
