For the Cake:
4 C. Almond Flour
1 t. Salt
2 t. Baking Powder
1 t. Baking Soda
1 ½ C. Butter
2 C. Swerve Granular
3 Eggs + 2 Egg Whites
2 T. Vanilla
1 ½ C. Heavy Cream

For the Filling:
8 ounces Strawberry Cream Cheese
1 T. Vanilla
½ C. Butter, Melted
¾ C. Swerve Confectioners
1 C. Fresh Strawberries (Diced)

For the Frosting:
1 ½ C. Butter
5 C. Swerve Confectioners
½ C. Heavy Cream
1 T. Vanilla

Easy Directions:

Start by greasing and preparing three 9-inch cake pans, lining with parchment paper and also spraying parchment paper. Set aside. In large bowl, whisk the flour, salt, baking powder and baking soda together. Set aside. In mixing bowl, mix butter and Swerve. When combined, add in eggs, vanilla and heavy cream. Next, add in flour mixture and mix until just combined. Pour into cake pans evenly. Bake at 350 degrees for 25 minutes. Let cool.

You can make the filling while the cakes are baking. In mixing bowl, mix all filling ingredients and refrigerate until ready to assemble the cake.

Next, you can also pre-make the frosting. In mixing bowl, whip all ingredients until smooth.

When the cake is cooled, place a small amount of filling onto serving dish. Place a cake layer on top. Spread filling over cake and place another cake layer. Repeat. When ready, frost your cake!
