Pecan Ingredients:
2 C. Pecans
½ C. Purecane Brown Sweetener
1 T. Butter
Cake Ingredients:
1 C. Butter
1 ¼ C. Unsweetened Almond Milk
1 C. Purecane Brown Sweetener
3 Eggs
1 T. Vanilla
3 ½ C. Flour
2 ½ t. Baking Powder
1 t. Salt
Frosting Ingredients:
8 Oz. Cream Cheese
1 T Butter
1 C. Heavy Whipping Cream
½ C. Purecane Confectioners Sweetener
1 T. Vanilla
Easy Directions:
- In a large skillet, sauté all pecan ingredients until lightly golden browned. Drain and set aside.
- Spray two 8 inch round pans with nonstick spray and set aside.
- In a large mixing bowl, blend together butter, almond milk, eggs, Purecane and vanilla.
- In a small bowl, combine flour, baking powder and salt. When mixed, pour into main batter and slightly combine.
- Mix in one half of pecans into batter.
- Pour into pans equally.
- Bake at 350 for 30 minutes.
- Let cool.
- When ready to assemble cake, using an electric mixer, whip together all frosting ingredients until light and fluffy.
- Remove cakes from pans.
- Spread frosting between cake layers.
- Frost the cake and sprinkle pecans on top!
