Pecan Ingredients:

2 C. Pecans

½ C. Purecane Brown Sweetener

1 T. Butter

Cake Ingredients:

1 C. Butter

1 ¼ C. Unsweetened Almond Milk

1 C. Purecane Brown Sweetener

3 Eggs

1 T. Vanilla

3 ½ C. Flour

2 ½ t. Baking Powder

1 t. Salt

Frosting Ingredients:

8 Oz. Cream Cheese

1 T Butter

1 C. Heavy Whipping Cream

½ C. Purecane Confectioners Sweetener

1 T. Vanilla

Easy Directions:

  1. In a large skillet, sauté all pecan ingredients until lightly golden browned. Drain and set aside.
  2. Spray two 8 inch round pans with nonstick spray and set aside.
  3. In a large mixing bowl, blend together butter, almond milk, eggs, Purecane and vanilla.
  4. In a small bowl, combine flour, baking powder and salt. When mixed, pour into main batter and slightly combine.
  5. Mix in one half of pecans into batter.
  6. Pour into pans equally.
  7. Bake at 350 for 30 minutes.
  8. Let cool.
  9. When ready to assemble cake, using an electric mixer, whip together all frosting ingredients until light and fluffy.
  10. Remove cakes from pans.
  11. Spread frosting between cake layers.
  12. Frost the cake and sprinkle pecans on top!
