Ingredients:

1 Gluten Free Refrigerated Prepared Pie Crust



½ C. Purecane Confectioners Sweetener

8 Ounces Cream Cheese

1 C. Lemon Juice (Spilt)

2 T. Grated Lemon Zest

1 ½ C. Heavy Whipping Cream

½ C. Water

½ C. Purecane Granular Sweetener

2 t. Cornstarch

Extra Whipped Cream

Easy Directions:

  1. Bake pie crust at 400 for 10 minutes and set aside.
  2. In a small saucepan, bring water, Purecane Granular, ¼ C. lemon juice and cornstarch to a rolling boil. You must stir constantly. Let boil for 4-5 minutes and set aside. Letting cool.
  3. Using an electric mixer, whip together Purecane Confectioners, cream cheese, remaining lemon juice and cream until light and fluffy.
  4. Pour whipped cream mixture into pie crust and top with glaze mixture.
  5. Refrigerate for 8 hours.
  6. Top with whipping cream!
  7. Serve and enjoy!
