Cake Ingredients:
1 ½ C. Melted Butter
1 ½ C. Cocoa Powder
1 ½ C. Water
3 C. Purecane Granular Sweetener
1 T. Vanilla
4 Eggs
2 Packages Sugar Free Chocolate Pudding Mix
2 C. Sour Cream
4 C. Flour
3 t. Baking Soda
½ t. Salt
Topping Ingredients:
8 Oz. Cream Cheese
2 C. Heavy Whipping Cream
1 T. Vanilla
½ C. Sugar Free Chocolate Syrup
Easy Directions
- Spray 2 8 inch baking cake pans with nonstick spray and line each pan with parchment paper. Set aside.
- In a large mixing bowl, cream together butter, Purecane, cocoa powder, water, vanilla, eggs, pudding mix and sour cream until well blended.
- In a small bowl, mix together flour, salt and baking soda. Add to main batter and mix.
- Pour into both pans evenly.
- Bake at 350 for 40-45 minutes.
- Let cool.
- Whip together all topping ingredients using an electric mixer until light and fluffy.
- Put an inner layer of topping between cake layers and continue to frost the outer edge and top of layered cake. Enjoy!
