Cake Ingredients:

1 ½ C. Melted Butter


1 ½ C. Cocoa Powder

1 ½ C. Water

3 C. Purecane Granular Sweetener

1 T. Vanilla

4 Eggs

2 Packages Sugar Free Chocolate Pudding Mix

2 C. Sour Cream

4 C. Flour

3 t. Baking Soda

½ t. Salt

Topping Ingredients:

8 Oz. Cream Cheese

2 C. Heavy Whipping Cream

1 T. Vanilla

½ C. Sugar Free Chocolate Syrup

Easy Directions

  1. Spray 2 8 inch baking cake pans with nonstick spray and line each pan with parchment paper. Set aside.
  2. In a large mixing bowl, cream together butter, Purecane, cocoa powder, water, vanilla, eggs, pudding mix and sour cream until well blended.
  3. In a small bowl, mix together flour, salt and baking soda. Add to main batter and mix.
  4. Pour into both pans evenly.
  5. Bake at 350 for 40-45 minutes.
  6. Let cool.
  7. Whip together all topping ingredients using an electric mixer until light and fluffy.
  8. Put an inner layer of topping between cake layers and continue to frost the outer edge and top of layered cake. Enjoy!
