Ingredients:
1 ¼ C. Flour or Almond Flour
¾ C. Cake Flour (OR Almond Flour)
1 t. Corn Starch or Xanthan Gum
½ t. Baking Soda
½ t. Baking Powder
1/2 t. Salt
1 Stick Butter, COLD and Cubed
¼ C. Swerve Granular
1/2 C. Swerve Brown
1 Large Egg PLUS 1 Egg Yolk
1 T. Vanilla
2 C. Lily’s Dark Chocolate Chips
Easy Directions:
In large mixing bowl, cream together both Swerves, butter and egg/egg yolk. Add in vanilla. Mix well. In separate bowl, combine flours, corn starch, soda, baking powder, salt and when mixed well. Pour into batter and mix well. Add in chocolate chips. Now, the fun part—this recipe is for 6 cookies. They are large! Roll into 6 balls and place on ungreased cookie baking sheet. Bake at 400 for 10-12 minutes. After ten minutes, flatten with a fork or spatula. Let set and cool.
