1 ¼ C. Flour or Almond Flour
¾ C. Cake Flour (OR Almond Flour)
1 t. Corn Starch or Xanthan Gum
½ t. Baking Soda
½ t. Baking Powder
1/2 t. Salt
1 Stick Butter, COLD and Cubed
¼ C. Swerve Granular
1/2 C. Swerve Brown
1 Large Egg PLUS 1 Egg Yolk
1 T. Vanilla
2 C. Lily’s Dark Chocolate Chips
In large mixing bowl, cream together both Swerves, butter and egg/egg yolk. Add in vanilla. Mix well. In separate bowl, combine flours, corn starch, soda, baking powder, salt and when mixed well. Pour into batter and mix well. Add in chocolate chips. Now, the fun part—this recipe is for 6 cookies. They are large! Roll into 6 balls and place on ungreased cookie baking sheet. Bake at 400 for 10-12 minutes. After ten minutes, flatten with a fork or spatula. Let set and cool.
Thank you so much for posting these recipes. You have no idea how helpful it is to have sweets that aren’t bad for me. You are a blessing to this “sweetaholic”!
Is there a substitute for swerve if too can’t find that item
you can find it at Walmart or Amazon–pretty popular–or use your choice of sweetener!
