1 T. Olive Oil

1 Lb. Ground Beef

½ Lb. Ground Sausage

1 C. Diced Sweet Potato

4 C. Diced Red, Green and Yellow Peppers

1 C. Cauliflower Rice

1 Can 28 Oz. Whole Tomatoes

1 Can 16 Oz. Pumpkin Puree

1 C. Chicken Broth

1 T. Cinnamon

1 t. Nutmeg

1 T. Cumin

Cheese and Sour Cream to Top!

Easy Directions:

  1. In a soup pot, brown beef and sausage with olive oil. Drain any fat. Add in sweet potato, peppers and rice. Add in all seasonings.
  2. In a blender, blend together tomatoes, pumpkin and chicken broth.
  3. Add to soup and bring to a rolling boil. Reduce heat and let simmer for 3-4 hours. The longer the chili simmers and sits, the better it will be!
  4. Serve with cheese and sour cream!
